SMOKED SCOTTISH SALMON
Can be served simply, on a plate with some green salad leaf, brown bread and butter to accompany. Also great with a warm potato salad, scrambled eggs and a cucumber salad. 50 g/person as a starter or 100g-125g/person for lunch or a main meal. Can also be served on squares of buttered brown bread - brilliant canapés and a very easy starter (one slice of bread makes 6 squares). Serve on a plate with freshly ground pepper and a squeeze of lemon!

SMOKED ORGANIC SCOTTISH SALMON
An increasingly popular product for those who like to buy organic. The fish comes from the Shetland Isles with its clear Atlantic waters. The organic salmon is approved by the Soil Association. A wonderful alternative to the more traditional smoked salmon. Great for canapés or as an unusual starter. A great talking point at the dinner table. Serve with a green salad or with a warm potato salad and perhaps some aspargus.

GRAVAD LAX
Gravad Lax is salmon which is not smoked but brined and marinaded in dill - the dish originates in Scandinavia where it is often used as a special supper dish. It is a product that is gaining in popularity and is great as a starter with some cucumber salad, bread and warm potato salad. Also good on oatcakes with a bit of garnish. The picture shows Organic Gravad Lax which is slightly more mellow than the traditional product.

SMOKED SCOTTISH TROUT
Our traditionally smoked Trout - ousting Smoked Salmon in favour and flavour! Serve on squares of brown, buttered bread as canapés or accompanied by brown bread as an elegant and simple starter with a mixed green salad. Also great for a special lunch or dinner with scrambled eggs (made with a dash of double cream), hot stewed potatoes (cubed, with finely chopped onion or sun-dried tomatoes, cream and seasoning) stewed slowly in the oven for 45 mins to an hour. A cucumber salad completes this lovely meal. 50 gram per person as a starter or 100-125gram per person for lunch or a main meal.

WHIRLIES
Roulades of Smoked Salmon with Smoked Salmon Pâté. A great stand-by in the freezer for the unexpected guests. Makes lots of instant Canapés - just slice when nearly frozen and put on a suitable biscuit - some freshly ground pepper and a squeeze of lemon. Serve as nibbles before dinner - no need for a starter and you save on the washing-up as well!

SMOKED CHICKEN
Chicken Breast gently smoked with a mixture of herbs. Wonderful with some citrus fruits, autumn berries and a crème fraîche dressing. Can also be used for a very superior Scandinavian open sandwich with sundried tomatoes, some fried mushrooms or roasted peppers! You are limited only by your imagination! The chicken is also great in a quick and easy risotto with some peas, onions and a creamy tomato sauce - and some rice of course!

SMOKED DUCK
Succulent smoked breast of duck, thinly sliced. Brilliant starter served with a selection of fruits in a light dressing of mayonnaise mixed with crème fraîche and lightly seasoned. Avocado, melon, mango or citrus fruits work really well. A crispy brown roll will make the duck stretch further.

SMOKED HAM
The packs of Smoked Scottish Ham are thinly sliced. Serve with a selection of fruits such as avocado, melon, mango, pear, fresh peach or nectarine as a simple starter with a difference. A dressing made with crème fraîche and mayonnaise, with some seasoning will compliment this starter. The Smoked Ham also makes wonderful open sandwiches for an extra special occasion, using good brown bread and some salad garnish.
